Weekend In The Mountains

For my b-day this year my hubby got us and some friends a cabin in the north Georgia mountains. It was a lot of fun, we didn't do much but sit in front of the fire and talk and laugh, but it was very relaxing. The cabin was beautiful and only a 2 hour trip from Atlanta, so it was perfect! We spent two nights, one with our friends and one on our own. I didn't really take many pictures at all, but here is some of them:

On the way up we stopped in Blue Ridge which ended up being a really cute little town who had amazing black bean burgers at Blue Ridge Brewery. Our friends Amy and Gouda came with us.

The view from the patio. Downstairs was a hot tub that I didn't get a picture of, but it was amazing!

My dad sent me some Allers magazines that I brought to read and work on some cross words.

This is were we spent most of the time.

No cake for me, but a breakfast casserole with candles that tasted yummy!

The best birthday gift of all; I got to beat my hubby in scrabble!

Cauliflower or Rice?

Ouch, not much blogging has been done this week. I've been busy working and not much fun stuff has been going on. I've been trying a bunch of new recipes this week though and it has all been successful. I thought I'd share one recipe with you all that was so delicious and it's def worth trying! It may seem odd, but it's so good! 

Cauliflower Rice Recipe (Blomkåls Ris)

One head of Cauliflower 
Olive Oil
4 Garlic Cloves
Half a red pepper ( rod paprika )
Half a green pepper ( gron paprika )
Two celery stalks ( selleri )
Green onions/Scallions 
1/2 t salt
1/2 t black pepper
1/2 t Cumin ( spis kummin )
1/2 t Chili Pepper 
1 t fresh thyme ( timjan ) 
1 Bay Leaf
2 Cups of Chicken Stock ( ca 5 dl ) ( I used two Chicken bullion cubes instead and mixed with 2 cups of water )

Put the Cauliflower in a food processor to make into rice like pieces 
Chop up the garlic, scallions, peppers and celery into small pieces
Put olive oil into a pan and saute the veggies until soft. 
Put in the Cauliflower pieces + all the spices and mix
Pour in the chicken stock
Let come to a boil and then lower heat to medium and let simmer for about 30 minutes
Enjoy!

Valentine's Day Craft Party

My friends just left my house after some fun Valentine's Day crafting. I thought I'd share some pictures with you all before I head to bed for an early wake up call tomorrow. The party was a lot of fun and we got some cute cards ready for Valentine's Day. So here comes a BUNCH of pictures:
