Homemade Granola Recipe

I'm usually pretty bad at sticking to one breakfast for a long time when I tend to get tired of the same old thing morning after morning. But for the longest time now, I've been eating the same breakfast every day. It's been Vanilla flavored yogurt, strawberries, blueberries and granola. I use to buy a box of granola at the store every week, but then I found a recipe online for homemade granola that I absolutely love so now I will never buy another box at the store again! Since I love it so much I thought I'd share it with you. It's SO good I keep sneaking into the jar and stealing hand fulls of it every now and then... 

Elin's Granola Recipe 
(yes, I did find a recipe online, but I changed it to my liking, so I think it's okay to call it Elin's Granola Recipe....)

3 cups or 7 dl oatmeal (havregryn)
2 cups or 5 dl coconut flakes. (Here in the US I can only find the very finely shredded at Whole Foods. But it's worth the extra stop, because it's best with that kind.)
Any nuts you have in the pantry. My favorite nuts are walnuts, almonds and sunflower seeds. They are so good toasted. 

1/4 cup + 1 Tablespoon or 3/4 dl brown sugar
4 1/2 Tablespoon canola oil
4 1/2 Tablespoon honey
1 1/2 Teaspoon vanilla 
1/4 Teaspoon salt 

Mix the oats, coconut and all the nuts together. Mix the rest of the ingredients and pour over the oatmeal mixture. I like to use my hands to really get everything evenly coated. Then take half of the mixture and put on a baking sheet and then into the oven on 325 degrees F (170 degrees Celsius) for 15 minutes. Remember to halfway through the 15 minutes stir the granola around. When 15 minutes are up remove the granola from the baking sheet and let cool and put the rest of the oatmeal mixture in the oven and do the same procedure.
